For feeding: I feed them very small amounts of food (allot of times they wont even eat)
Lighting and Heating: Keep the UV light on and a very mild heat lamp that will keep the tank around 70-85

i usually get the paper every week and get the times of sun rise and sun set and add an hour to the sunrise and decrease it 1 hour b4 sunset i.e if it says sunrise: 6.12 i'd put it on 7.12. because i live in Australia, would this be ok

That sounds ok since you live in Australia you should try to follow the natural daylight pattern.

No they should be fine. You may or may not be suprised on how many people keep retiles of all kinds and keep the lights on alot longer then they need to be on. The correct time promotes healthy behaviours but does not dictate it 100%. Hope that helps a bit.

Yes because the days get longer and shorter so you will have to increase and decrease the daylight hours.
